Last night at Christkindlmarkt, I bought a small bag of lavender and a new recipe from a local farm. Two hours later, my entire house smelled like magic. Three hours later, I had to move the cookie jar to a high shelf so I’d stop reaching into it.
Lavender Butter Cookies
- 1/2 cup unsalted butter at room temperature
- 2/3 cup packed light brown sugar
- 1 large egg
- 1 tsp. vanilla
- 2 1/2 cups flour
- 1 tsp salt
- 1 tsp lavender
Makes 5 dozen cookies.
Combine butter and sugar in the bowl of a stand mixer. Beat on high with the paddle attachment for 2-3 minutes until light and fluffy. Add egg and vanilla and mix to combine. Add flour, salt, and lavender on low speed until all ingredients are combined. Divide dough into three balls and roll into 1 1/2 diameter logs. Wrap in plastic wrap and chill for at least one hour. Heat oven to 350 degrees. Slice cookie log into 1/4 inch rounds and place on cookie sheet. These cookies don’t grow much so you can space them close together. Bake for 15-20 minutes or until lightly golden.
