The only silver lining to sick days around here is that sick kids get banana bread if they manage to keep still and rest. We’ve had lots of Cinderella-filled and banana-scented days since preschool started again!
Sick Day Banana Bread
/// 2 very ripe bananas, peeled
/// 1/3 cup melted butter
/// 1/2 cup of sugar
/// 2 eggs
/// 1 teaspoon baking powder
/// Pinch of salt
/// 1 1/2 cups of all-purpose flour
Preheat the oven to 350°F and butter a loaf pan.
Dump all of the ingredients into a mixing bowl and mix together. The batter will be lumpy but I actually prefer the fat chunks of banana myself!
Pour the batter into your loaf pan. Bake for 1 hour or until a tester inserted into the center comes out clean.
Remove from oven and cool. Slice it up, trying to be patient because it will slice better the cooler it is. We never seem to be able to wait that long, though!
