Spring has sprung, as they say. We had some glorious days of sunshine before springtime showers came back to Salt Lake City and I can’t wait to take the kids back out into the sun when they leave.
In the meantime, this is a little fake-it-to-make-it Mom recipe from me to you. And by “recipe” I mean I added something to a box mix and then I photographed it real pretty like.
Strawberry lemonade bars are the only way I like to eat lemon bars. For some reason, the straight lemon filling just doesn’t work for me but as soon as you add a bit of strawberry I can eat a whole plate of these. I’ve tried fresh and frozen strawberries, but the bars always end up a little too goopy in the end. It turns out that the trick is to use freeze dried strawberries. You still get that great berry taste without all the extra juice.
Betty Crocker Lemon Bar boxed mix + crushed freeze dried strawberries + 1 Tbsp flour + bake according to directions + let cool completely and dust with powdered sugar = something easy, delicious, and pretty to make with your kids on a weekday in spring.
