I had the opportunity to be part of a really fun blogger event a couple of weeks ago at a local mall and it was such a nice way to kick off the holiday season!
We hung out and learned new Chex mix recipes and then we wrapped them up as holiday gifts. A nice mix of local bloggers were present and we had a good time catching up with each other and filling up on sugary cereal goodness.
My mom always made Chex mix for the holidays, using the standard recipe on the back of the box (pecans and all), but with Eva’s nut allergy I haven’t explored making some for her. She does eat Chex cereal because the rice and corn versions are a safe choice for kids with peanut and tree nut allergies so in all fairness I should really be exploring new ways to dress it up and turn it into a treat. How convenient that General Mills saved me the trouble and hooked me up with a yummy recipe that I can tweak for Eva! (We actually tried a bunch of different ones, but this was my favorite. Nut-free Mexican Hot Chocolate Chex Party Mix
NOTE: Remember to always check labels for nut warnings if you have a food allergy! Occasionally, allergy information will change so it’s important to check every label even if you eat the food product often. The recipe below is based on the information I had about the products at the time of publication.
Prep time: 15 min (makes 16 servings)
- 3 cups rice Chex cereal
- 3 cups corn Chex cereal
- 1 and 1/2 Tbsp ground cinnamon
- 3 Tbsp powdered sugar
- 1/2 Tbsp vanilla
- 1 Tbsp cocoa powder
- 1/4 cup butter
- 1 cup allergy-safe semisweet chocolate chips (we use Trader Joe’s)
- 1/4 cup sweetened condensed milk
- 1 cup flaked coconut
- 1 and 1/2 cups mini marshmallows
Measure cereal and put it into a large microwaveable bowl. In a 2-cup microwavable measuring cup, heat butter and chocolate chips on high for one minute or until almost melted. Stir and microwave another thirty seconds or until mixture can be stirred smooth. Stir in condensed milk and heat another thirty seconds or until boiling. Stir in cinnamon. Pour over cereal mixture and stir until evenly coated. Microwave on high for about three minutes, stirring every minute, until the mixture is glazed. Stir in the coconut and the mini marshmallows. Pour onto a waxed-paper lined pan to cool.
